There is nothing better than to have your taste buds woken up from a jolt of citrus. One of my favourite citrus wake ups is in a self-saucing pudding.
It is comfort food at its best with the cakey top and oozy custard base that is full of citrus of your choice. Lime or lemon delicious are commonly used in this pudding but there are no golden rules, use mandarin, cumquats or orange, its your call. Whatever you choose, this dessert celebrates citrus. Enjoy!
Lime Delicious Pudding
50gms butter, softened
3/4 cup caster sugar
3 eggs separated
2 level tablespoons self raising flour, sifted
2 tablespoons plain flour, sifted
4 small limes, zest and juiced (1/4 cup lime juice)
1 1/2 cups milk
Preheat oven to 160C (fan-forced). Lightly grease 6 x 1-cup capacity ovenproof dishes. Cream butter and half the sugar and egg yolks together in small bowl with electric mixer until light and creamy. Stir in sifted flour, zest, juice and milk.
Beat egg whites with remaining sugar until soft peaks form, gently fold through mixture. Pour into the ovenproof dishes and place into a baking tray in the preheated oven. Pour hot water to come halfway up the sides of the dishes and bake for 35-40 minutes. Serve with whipped cream or ice-cream.
